Here is a healthy, low-sodium, delicious, easy version of homemade chicken soup. My kids and husband LOVE it and it’s loaded with veggies and vitamins and really satisfied us on those chilly evenings by the fire when we crave that COMFORT!!! Enjoy!
- ½ package of Smart Taste high fiber rotini
- 32 oz of low sodium chicken broth
- 1 yellow onion chopped
- 5-6 fresh, peeled carrots chopped
- 5-6 celery stalks chopped
- 1 small rotisserie chicken
Put a little olive oil in the bottom of a large pot and add onions, celery and carrots. Once they are “sweating” add in your chicken broth and about 20 oz of water. Let simmer. Once simmering, pull all of the meat off of the chicken and add into soup. Let simmer for about 30 minutes. Add a few handfuls (about ½ package) of the rotini and simmer until rotini is al dente. SERVE!!!! No need for a side or crackers. This is a satisfying, hearty meal in itself!
